Rebel - AOP Maury Sec
Terroir : Black marl and brown schist
Alcohol level : 15° C
Grape varieties : black Grenache 80% Syrah 10% Mourvèdre
Yield : 17 hl/ha
Vinification : Followed by our technicians on a daily basis. The grapes are harvested at optimal maturity. The harvest is manual with a sorting at the plot. Total destemming and maceration of more than 30 days. Aged on lees for 6 months with monthly stirring until bottling.
Tasting temperature : 16°
Tasting : Ruby color with purple reflections, the first nose develops on a mixture of black cherries, juniper berries, pepper and sweet spices. When aired, notes of crushed raspberries, cherries and chocolate are revealed. In its youth, red and black fruits dominate the palate and are associated with powerful licorice and pepper notes. The velvet tannins are not less present and accompany the whole tasting.
Food and wine pairing : A 7 o’clock lamb, a leg of venison with mustard, a tournedos Rossini or tagliatelle with black truffle from Périgord.
Eximia - AOP Maury Sec
Terroir : Black marl and brown schist from metamorphic rocks
Alcohol level : 15° C
Grape varieties : black Grenache 60% Syrah 40%.
Yield : 15 hl/ha
Vinification : Following a very strict specification, imposing the choice of pruning, the period, the maintenance of the soils… and a monthly follow-up. The grapes are harvested at optimum maturity. The harvest is manual with a sorting in the plot and a sorting in the cellar. Partial destemming and maceration of more than 30 days. Aging on lees for 4 months with batonnage. The wine is then aged for 18 months in our French oak demi-muids. Bottling is done without filtration.

CUVÉE PRESTIGE limited series 2020
Tasting : A dry Maury for ageing with a complex nose of candied black fruits, garrigue and roasting. A frank, voluptuous and powerful mouth. The notes of liquorice and spices typical of the Syrah, the velvet, the fruit and the generosity of the Grenache make this dry Maury a persistent wine and an exceptional holding in mouth.
Food and wine pairing : Aperitif, scallop risotto, asparagus, fish, fresh cheeses…
Indécent - IGP Côtes Catalanes
Terroir : clay-limestone and black schist
Alcohol level : 13° C
Grape variety : Grenache gris 100%.
Yield: 35 hl/ha
Vinification : The harvest of the grey Grenache is very early to optimize the freshness and the fruit.
The harvest is manual to preserve the entirety of the grain, to have quality pressings and to avoid oxidation.
The vinification after a weak settling is done at low temperature. Once the alcoholic fermentation is over, the wine is aged on fine lees for 6 months before bottling to bring complexity and volume.
Tasting temperature : 9 to 12°C

Tasting : The particularity of our Grenache Gris is the high age of the plots (more than 45 years old) which gives our wine this minerality, these sharp and powerful aromas of almond, apricot and fennel with some exotic notes. The palate is harmonious and delicate, ending with citrus notes and a saline and persistent finish. A wine with an incredibly long and delicate finish.

Vita in Roséa - IGP Côtes Catalanes
Terroir : clay-limestone and black schist
Alcohol level : 13° C
Grape variety : 100% black Grenache
Yield : 35 hl/ha
Vinification : The harvest of the black grenache is very early to preserve the acidity and the citrus aromas.
The harvest is manual and that in the morning for cool temperatures, to have quality pressings and avoid oxidations.
The vinification direct pressing with a static settling is very light to preserve a maximum of polyphenols. Fermentation in thermo-regulated stainless steel tanks and early bottling.
Tasting temperature : 9 to 12°C
Tasting : The combination of the two terroirs offers a great diversity to our wine. The charm and elegance of our black Grenache gives us this salmon color and very clear. Its volume and fatness do not hide the aromatic and greedy finesse. We are seduced by the beautiful salinity, a joyful, light and festive wine. Endowed with a magnificent and rare sapidity, it announces itself as a wine of high gastronomy.
Food and wine pairing : Aperitif, tapas, veal ribs but it will also make a harmonious marriage with grilled red mullet, tian of vegetables in the Nice style, octopus salad, artichokes…

Diabolique - AOP Maury Doux VDN
Terroir : clay-limestone and black schist
Alcohol level : 16,5° Analysis 107g/L of residual sugar
Grape variety : Grenache noir 100
Yield : 27 hl/ha
Vinification : Manual harvest, total destemming. Maturation on grapes followed by a long maceration of 3 to 4 weeks. Maturation in an oxidized environment. Aged in oak barrels.
Tasting temperature : 9 to 12°C
Tasting : Its robe is mahogany and slightly tiled. The nose is soft, charming, going from candied fig to walnut through toasted notes of cocoa. The mouth is supple, melted on complex flavors of dried fruits, old brandy on a background of old wood and nuts with coated tannins. Good freshness and great persistence in the mouth.
Food pairing : As an aperitif with olives, quiches, chorizo, almonds and roasted hazelnuts… At mealtime with sweet and salty dishes. For dessert with blue cheeses such as Roquefort. A treat with chocolate cakes.
